The Brisket is cut from the breast, or lower chest of the beef. This cut has alot of connective tissues that will break down during slow cooking adding flavor and texture to this naturally tougher cut of meat. The untrimmed fat cap will slowly melt into the meat during roasting adding flavor and moisture to the meat throughout cooking. The process of brining for several days and slow cooking for several hours transforms the brisket into a tender and delicious corned beef roast!
